With almost 30 years international cuisine experience behind me I pride myself in
my attempt to bring my diners a new dining sensation to remember. I always endeavour
to use wherever possible as much locally sourced produce as I can find, with a big
emphasis on it being seasonal and preferably organic. With the seasons changing as
they are and growing techniques evolving, much loved produce of chefs and customers
alike such as asparagus are available well past the normal season which used to finish
around June 21st.
To this end you may find certain dishes on the menu well after when the purists consider
them at their best, so long as the quality is still very good. Everything on the
menu is produced here on the premises, from basic stocks, soups and sauces to breads,
desserts and ice creams. Whilst every care and attention is taken to balance the
menu offering I accept that it is not going to accommodate all tastes, and if we're
not too busy, I will be as flexible as possible. James Miller, chef.
